Introduction

Traditional Mole sauce takes hours and hours to make. This recipe uses Mole ingredients blended together, poured over a small pork roast and slow-cooked to get that traditional Mole flavor. Ingredients

    11.68 serving Boneless Pork Shoulder Roast (112 g) 4 oz
    0.66 cup Southern Grove Slivered Almonds
    0.66 cup raisins (40 g)
    3 tbsp Canola Oil
    0.5 cup, chopped Onions, raw
    2 tsp Aldi Minced Garlic
    1.5 cup Del Monte Petite Cut Diced Tomatoes
    1 cup Martin's Bread Cubes
    0.5 cup (8 fl oz) Chicken Broth
    0.75 serving Nestle's Mexican Chocolate (1/4 tablet)
    2 tbsp Canned Chipotle Peppers in Adobo Sauce

Directions

Heat 1 tbsp. oil in cast iron pan and toast the almonds, then add raisins and cook for about 3 minutes. Remove nuts and raisins from pan, add 1 tbsp. oil to pan and saute onions and garlic. Remove onions and garlic and heat remaining oil in pan and sear roast on all sides.

Place bread cubes, tomatoes, peppers in adobo sauce, chicken broth and chocolate cube into blender and blend at high speed until sauce is smooth. Place browned pork roast into crock, pour sauce over all and then onion,garlic,raisins and almonds. Cover crockpot and cook on Low for 8 hours

Serving Size: Makes 12 4-oz. servings of pork with sauce.
