    1.5 cup Arugula
    0.25 cup, cubes Squash, winter, acorn, cooked, baked, with salt
    1.0 tbsp Olive Oil
    6.0 ounces Chicken Breast (cooked), no skin, roasted

Directions

Roast beets + squash 40 min at 400° Lightly salt and pepper chicken, pan sear in cast iron until thoroughly cooked Serve with arugula and lemon pepper dressing (optional)
