Tips
Any type of mushroom can be used. Bok Choy may be substituted for napa. Amounts of vegetables can be increased. Other vegetables can be added.
Directions
1. Prepare lo mein noodles, drain well and add a dash of toasted sesame oil to keep from sticking together.
2. Mix chicken broth, soy sauce, oyster sauce, toasted sesame oil and garlic chile sauce. Set aside.
3. Heat 1 tbsp oil in a wok, add mushrooms and cook over high heat, stirring occasionally, until tender and browned, ~ 5 minutes. Add ginger and garlic and cook until fragrant, ~ 1 minute.
4. Add lo mein noodles, napa and snow peas, stirring occasionally until the snow peas are barely cooked, ~ 2 minutes.
5. Add sauce and scallions to pan, stirring occasionally until sauce is absorbed and noodles are brown in spots, ~ 5 minutes.
Serve with extra garlic chile sauce on the side.
