Introduction

Tried this recipe today, if you like tofu you may like it. The BBQ sauce was not enough flavor for me, but I am not used to eating tofu. Thought I would share it. Ingredients

    1 can Black beans drained and rinsed
    4 cups diced tofu
    1 1/2 cups white rice cooked
    1/4 cup water
    2/3 cup BBQ sauce (the recipe only calls for 1/3 cup but I did not think it was enough so I doubled it, the nutrition facts reflect 2/3 cup)

Directions

Combine water, bbq sauce, beans and rice in a 2-qt sauce pan and heat thoroughly, about 10 minutes. Add tofu and cook until heated through, 2-5 minutes. Serve

Makes about 5 1.5cup servings
