Introduction

Ingredients

2 cans black eye peas, drained (not the kind seasoned with bacon)
2 cans Yellow Sweet Corn, drained
2 cans diced tomatoes w/ zesty mild green chilies, drained
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
1 Jalapeno Pepper, seeded and chopped
1/2 med yellow onion, chopped
Dressing:
1/2 cup Extra Virgin Olive Oil
1/2 cup Vegetable Oil (could also swap for more olive oil, but i didn't like the taste of ALL olive oil)
1/2 C Red Wine Vinegar
1 tbsp balsamic vinegar
1 tbsp Dijon Mustard
1 tsp salt
1/2 tsp black pepper
1/4 tsp Granulated Sugar
Pinch of dried Oregano
Directions
In a large bowl, combine your vegetables. In a glass jar, combine your dressing ingredients, put the lid on, and burn a few calories shaky shaking it up until well blended. Pour the dressing over the vegetable mixture and stir gently, but thoroughly. Cover and refrigerate until serving time, preferably overnight.
I prefer to serve this with pita chips, but it also pairs well with tortilla chips and corn chips. None of these options have been calculated into this recipe's nutrition facts, so please keep that in mind when budgeting your calories and whatnot!
