Introduction
Kind of like potstickers or wontons, but with peas! Kind of like potstickers or wontons, but with peas!Number of Servings: 10
Ingredients

2 cups frozen peas
2 tablespoons Olive Oil
1/3 cup parmesan cheese
2/3 cup part-skim ricotta cheese
zest of one lemon
salt to taste
1 package wonton wrappers
Directions
This makes approximately 80 dumplings. Nutritional information is based on an 8 dumpling serving.
Cook peas in salted, boiling water for about 2 minutes. Drain and run cool water over them to stop cooking.
Combine peas, ricotta and olive oil in food processor until just blended (you can make it very smooth or chunky, to your taste).
In a bowl, fold in parmesan and lemon zest to pea mixture.
Drop by teaspoons onto wonton wrappers. Wrap wontons wrappers according to package directions.
Can be steamed, fried or frozen for later. If freezing, lay out on a parchment lined sheet pan and freeze for about hour before adding to a freezer bag.
