Number of Servings: 6

    1 dozen fresh, large mushrooms
    1/2 cup butter, divided
    3 tablespoons onions, finely chopped
1 1/2 cups fresh bread crumbs (You can also use Stove Top)
    1/2 tsp. salt
    dash black pepper
    dash cayenne pepper
    2 tbsp. parmesan cheese
    1 garlic clove, minced

1). Preheat oven to 325 degrees
2). Clean mushrooms; remove stems by twisting them out of the cap. Be sure to leave the mushroom cap whole.
3). Chop the stems into tiny pieces.
4). Saute mushroom caps in 3 tbsp butter, set aside.
5). Saute chopped stems & onions in remaining butter until onion is tender.
6). Stir in breadcrumbs, salt, pepper, garlic and cayenne pepper.
7). Stuff each mushroom cap with the bread crumb mixture, allowing the mixture to protrude out the top of the cap.
8). Sprinkle each mushroom with parmesan cheese.
9). Place mushrooms in a greased baking dish. Bake at 325 degrees for 15 minutes.

Note: Depending on the size of your mushrooms, you may have extra of the bread mixture. You can use the extra to stuff a tomato. (Cut tomato in half, remove some of the innards and stuff with the bread mixture). You can also add peppers to the bread crumb mixture, or use mozzarella cheese in place of parmesan if you prefer.
