Ingredients

    4 clove Garlic
    4 slices (1" dia) Ginger Root
    3 large whole (3" dia) Red Ripe Tomatoes
    1 cup, chopped Onions, raw
    2 tbsp Canola Oil
    400 gram(s) Bush's Best Cannellini Beans - White Kidney Beans (1/2 cup, 130 grams, 3.5 servings per container)
    2 cup (8 fl oz) Water, tap
    3 tbsp Cilantro, raw

Directions

Heat the oil. Add onions and reduce the fire to allow them to caramelize. Then add the garlic and ginger, keeping heat low. Add the tomatoes and cook - covered - for 20 minutes. When the tomatoes have softened to a pulp, add water and cook for another 10 minutes on a slow flame. Then add beans and cilantro, cook for five minutes and serve. If you're fastidious, scoop off the tomato skins on the surface of the soup.
