I double the recipe then add salt, pepper, and granulated garlic to taste while sauteing the squash and onion. Then, when adding the rest of the ingredients, I add the meat from a whole large roasted chicken from SAMs. 6 - 8 pre-cooked chicken breasts also do the trick. Ingredients

1 cup, shredded Cheddar Cheese
2 cup Sour Cream, reduced fat
1 large Onions, raw
5 serving (makes 1/2 cup prepared) Stove Top Stuffing Mix
1 tbsp Crisco Pure Vegetable Oil
24 oz Sams Club Seasoned Rotisserie Chicken
6 cup Squash - Yellow and Zucchini
2 cans Campbell’s Cream of Chicken Soup (98% fat free)
Tips
Top with salt and pepper on the plate to "wake it all up". I serve with garlic toast.
Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
2 Remove chicken from bone/shred chicken.
3 Heat oil in a skillet over medium heat; cook and stir squash, salt, pepper, garlic, and onion until tender, 8 to 10 minutes. Add water and simmer to soften squash, 2 to 4 minutes. Stir chicken, cream of chicken soup, sour cream, and Cheddar cheese into squash mixture; mix well.
4 Transfer squash mixture to the prepared baking dish; top with stuffing mix.
5 Bake in the preheated oven until cheese is bubbling and stuffing is browned, about 30 minutes.
