Ingredients

    .75 cup Clams, canned, meat only
    2 tbsp Cream Cheese
    57 grams Parmesan Cheese, shredded
    0.25 cup Cheese, Mozzarella Cheese, Fat/Free, Shredded Kraft
    .3 serving Betty Crocker Authentic Cornbread & Muffin mix (mix only, 3 tbsp) (by TEMPEO)
    4 clove Garlic
    6 large Mushrooms, fresh

Tips

If you want to avoid all the carbs, make sure you drain the clams well and omit the cornbread mix. Cornbread mix was all I had around, bread crumbs are more traditional. Almond flour might work, but I haven't tried it.


Directions

Remove stems from Mushrooms
Finely chop stems. Mix stems with minced garlic, softened cream cheese, clams (drained), and cheeses. Stuff caps with mixture and bake 20 minutes at 400 degrees
