Ingredients

2 cup cooked Quinoa
1/3 cup Applesauce, natural unsweetened
1/2 cup Coconut Oil
4 Eggs, large
16 tbsp (1cup) Stevia Blend for Baking (or any sugar will change your calorie count)
16 tbsp (1cup) Cocoa Powder, Hershey's Natural Unsweetened
1 tsp Baking Soda
1 tsp Vanilla Extract
1/3 cup Almond milk - Silk - vanilla (or any milk but will change your calorie count)
Tips
I also love chocolate and peanut butter, so adding peanut butter chips or the peanut butter powder (especially for those wanting to add more protein to their muffins). I made this muffin just to try and get my protein (the quinoa) in another form so adding the peanut butter powder will add to that with more flavor. ENJOY!
Directions
Cook and cool quinoa (bring to boil then cover lower heat to LOW and cook for 15 minutes)
Add all ingredients to a bowl mix for 2 minutes will be liquidy. Pour into cupcake pan if not using liners be sure to spray. Bake at 350 for 15 minutes. Touch for doneness. Should be springy. These are very moist. SUPER YUMMY!
