Introduction
This is something different to jazz up ground turkey. I used reduced calorie whole wheat bread when making the crumbs and serve this burger on whole wheat burger buns or kaiser rolls. I used fat free mozzarella but if you prefer and can find it, fat free or soy pepper jack slices work well too. This is something different to jazz up ground turkey. Ingredients

Burger:
1½ lbs extra lean ground turkey
½ tsp fresh ground black pepper or more to taste
3 Tbsp white wine
1Tbsp Dijon mustard
¼ cup grated Vidalia or white sweet onion
1-2 garlic cloves, minced
1¼ tsp thyme
½ tsp dried sage
1/3 cup dry whole wheat breadcrumbs*
3 oz fat free Mozzarella or fat free Pepper Jack cheese
2 Tbsp white wine
Onion and Mushroom Sauce:
1 Tbsp extra virgin olive oil
1 large Vidalia onion, halved and cut into thin half rings
½ cup white wine
2 tsp lite unsalted butter or Smart Balance Light spread
Directions
Place the ground turkey in a large bowl. Add pepper, white wine, mustard, garlic, grated onions, thyme and sage; mix well. Gently add breadcrumbs and mix until combined. Do not over mix as this will make the meat tough.
Divide the meat mixture into 8 equal amounts and pat into a 5" patty that is a little thick in the center. Place a mound with ¼ of the cheese at the center of 4 of the patties. Carefully place the other 4 paties on top and seal the edges well; pat smooth. Place patties in the fridge to firm up before cooking.
To prepar the sauce: Heat olive oil in a medium skillet over medium heat. Once it becomes hot, add the onions and sauté for 5-7 minutes until the onions are soft and take on a little color. Season with a small amount of pepper if desired. Add the mushrooms and wine and stir well. Cook and stir for 3 minutes. Add the butter and cook just until melted to mix with the wine. Cover and turn off the heat until ready to serve.
While the onions are cooking: Heat a large skillet until piping hot but not smoking. Add tthe burgers to the skillet and cook fro 2 minutes to create a good sear. Turn the burgers and continue cooking another 2 minutes. Add the final 2 Tbsp of white wine to the pan and cook an additional minute or two or till the burgers are done.
Serve burgers on whole wheat burger buns or Kaiser rolls topping each patty with the sauce.
