Ingredients

1 cup Whole Wheat Flour
1/4 cup Applesauce, unsweetened
1/2 cup No Name Crushed Pineapple in Juice
1 cup Quaker Quick Oats Canada
4 oz Silk cashew milk unsweetened
5/8 cup, unpacked brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 medium carrots, shredded 5 serving Parkay, Spray Margarine, 1 spray
Tips
You could even make this a dessert by adding a little coconut glaze, but they are tasty just as they are with a steaming cup of coffee or tea.
Directions
Preheat oven to 350 degrees.
Combine applesauce, sugar, milk, pineapple, and oats in a large bowl and set aside for 15 minutes. Meanwhile, combine flour and remaining ingredients, except carrots, in a medium bowl, stirring well with a whisk.
Stir flour mixture into oat mixture until combined. Fold in carrots. Spread into an 11 X 7-inch baking dish coated with cooking spray.
Bake in a 350-degree oven for 18-20 minutes or until a wooden toothpick inserted in the centre comes out clean. Let cool on wire racks and cut into 16 bars.
