Ingredients

    3lbs Red Potato - Cut in 1/2" cubes
    1/2 bag frozen Baby Brussels Sprouts halved (about 6oz)
    1/2 Red Onion Diced
    4 tbsp Extra Virgin Olive Oil
    1 tsp Garlic powder
    1 tsp Thyme, ground
    .5 tsp Salt
    .5 tsp Pepper, black
    1 tbsp Parsley, dried
    4 Al Fresco Sweet Apple Chicken Chicken Sausage Links, sliced
    4 oz SHREDDED Tillamook Pepper Jack Cheese


Directions

Preheat oven to 425* F

In a 4qt or larger casserole dish toss in cubed potatoes, halved brussel sprouts & diced onion. Add 3 tbsp of olive oil and all the garlic, thyme, salt, pepper & parsley. Toss to coat everything evenly.

Put in the oven.

In a frying pan add the remaining olive oil and the sausage link slices. Fry over medium high heat until golden brown. Remove from heat and allow to cool on a plate with paper towels to absorb some of the grease.

Remove the potatoes from the oven and stir in the link slices, return to the oven.

Bake for 50 minutes stirring/turning every 15 to 20 minutes.

Add the shredded pepper jack and bake just until the cheese is melted.
