This is a versitile recipe for a filling morning breakfast. Add nuts and fruit to boost the moisture and flavor. My favorite add-ins include chopped dates, chopped apple, mashed banana, dried blueberries, shredded carrots, chopped/slivered almonds, and sunflower seeds. Ingredients

3 Tbsp Ground Flax Seed Meal
1 Tbsp Cinnamon, ground
1/2 tsp Baking Powder
1 Egg
1 Tbsp Coconut oil
1 Tbsp Water
2 tsp - 1 Tbsp Maple Syrup
Splash of Vanilla Extract
Directions
1. Crack egg into a coffee mug or a ramekin and whisk well with a fork.
2. Add all other ingredients, whisking vigorously with your fork (it does not matter if the coconut oil is hardened, just stir it all in very well.
3. Microwave for 1 minute (then check and cook for another minute as needed. I normally cook it for 2-2.5 minutes total) OR bake at 350*F in a ramekin for 10-15 minutes or until done. You can also use a regular muffin tray and fill two holes to make two medium muffins out of this mix. Pour water into the rest of the holes when baking, and this helps the muffin steam.
