Introduction

Apples are tart, carrots stay crisp, and I eat it as my fruit-veg base on paleo with all meals. Apples are tart, carrots stay crisp, and I eat it as my fruit-veg base on paleo with all meals.

Ingredients

    2 serving Apple-Granny Smith Green (Medium)
    2 large (7-1/4" to 8-1/2" long) Carrots, raw
    1.5 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    1 tbsp Cinnamon, ground

Directions

Peel and slice apples.
Peel carrots. Cut on a bias.
Melt coconut oil in microwave for 1 minute.
Mix apples. carrots, oil, cinnamon - everything - together in a pan.
Cook in pre-heated oven at 350F until roasted. Mix once to prevent burning and to allow liquids in base of pan to coat veg.

Serving Size: makes two 3/4-1 cup servings
