0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
1 tbsp Coconut Oil - Nature's Way Pure Extra Virgin
0.3 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
2 cloves Garlic
1 cup, sliced Zucchini
1 cup, chopped or diced Broccoli, fresh
4 medium Mushrooms, fresh
1 cup Baby Spinach (raw)
2 tbsp Soy Sauce
Tips
Makes 2 meal size servings or 4 side dish servings
Directions
Cook quinoa according to package instructions.
In large pan, heat coconut oil. Add onion and garlic and saute for 1-2 minutes. Add Zucchini, broccoli and mushrooms. Saute for about 5 minutes, until vegetables begin to soften. Add Spinach. Stir until spinach begins to wilt and ten stir in cooked quinoa and soy sauce. Cook, stirring, for about until everything is well mixed and heated through.
