Ingredients

4 large Egg, fresh, whole, raw
18 large Egg white, fresh
5 cup Earthbound Farm - Mixed Baby Greens
1 cup Mushrooms, canned
6 tbsp Parmesan Cheese, shredded
1 cup Kraft Finely Shredded Sharp Cheddar Cheese
Directions
Preheat oven to 350
Chop greens and put in large bowl
Add Eggs and Egg whites & shredded cheddar
Drain mushrooms & add to bowl. Mix thoroughly.
Apply cooking spray to 2 Jumbo Muffin Pans.
Add 1/2 TBL of parmesan to each muffin cavity.
Scoop egg mixture into each muffin cavity.
Bake 25-25 minutes until eggs are completely cooked.
Let cool on racks, then wrap each muffin in wax paper, put in freezer bag and freeze.
Reheat in microwave/toaster oven.
Serving Size: Makes 12 Jumbo Muffins
