Ingredients

    1 cup kernels Yellow Sweet Corn, Frozen
    74 gram(s) bell pepper, red, sweet, raw
    3 tbsp Extra Virgin Olive Oil
    1 tsp Salt
    1 pepper Jalapeno Peppers
    6 tbsp Cilantro, raw
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    .5 lime yields Lime Juice
    2 tsp Granulated Sugar
    1 tbsp Cumin seed

Directions

Add frozen corn, chopped red bell pepper, jalapeno (seed removed if you prefer it a little less spicy), diced red onion and chopped cilantro to a bowl, toss. In a separate bowl, whisk together olive oil, salt, cumin (powdered is fine), sugar and lime juice. Pour dressing over vegetables and toss to combine well. The corn will thaw fast and keep the salsa cool.

Serving Size: Makes 8 single-size servings
