Introduction

Ingredients

    Whole Wheat Flour - 8 cups
    Warm Water - 2 3/4 cup
    EV Olive Oil - 2/3 cup
    Honey (Raw, local) - 2/3 cup
    Instant Yeast - 2 Tbs
    Salt - 1 Tbs
    Optional:
    Vital Wheat Gluten 2 Tbs
    Dough Enhancer - 2 Tbs

Directions

Makes 4 loaves of bread with 12 slices in each loaf for a total of 48 slices.

Pour olive oil and then honey in measuring cup. Pour in mixer. Add water (110 degrees) and yeast. Mix. Let sit for 10 minutes. Add half the flour, salt, gluten and dough enhancer. Add remaining flour. Mix thoroughly. Knead for 10 minutes. Let rise in greased bowl until double. Punch down. Divide in 4 portions. Roll each out. Fold over. Let rise in greased loaf pan for 30 minutes in warm, draft-free place. Bake at 350 for 20 minutes. Turn on cooling rack. Enjoy!
