Ingredients

1 serving veggies, carrots shreds, raw (1 7" carrot) (by EXOTEC)
8 oz Pork Loin Roast - baked (by MOMMABALL)
1.75 cup Del Monte Diced Tomatoes, No Salt Added
1.75 cup Soup - Health Valley Organic Black Bean (no salt added) (by GIRLFROMSMYRNA)
1.3 serving Frozen Whole Kernel Corn (Serving Size 2/3 cup) (by RHONDARLC)
Tips
Taco shells will add considerable carbs and calories. Just be aware they were not included in nutrition analysis.
Directions
1. Spray a 10-inch skillet with cooking spray and heat over medium heat for 1 minute. Add shredded carrot and cook for 1-2 minutes, stirring often.
2. Add pork, taco seasoning, tomatoes, black beans and corn. Bring to a boil. Reduce heat and simmer until most of the liquid is gone and corn and carrot are tender.
3. Warm corn tortillas by wrapping in a damp paper towel and microwaving for 30 seconds. Turn over, and warm another 30 seconds as needed.
4. Spoon ¼ cup mixture into each warm tortilla and top with optional ingredients below.
Optional ingredients:
Shredded 2% milk Mexican-style cheese
Plain Greek yogurt
Cilantro leaves
Salsa/hot sauce
