Introduction
This is very similar to the applesauce oatmeal muffins recipe I found here, but I used 2 % milk, 1/2 cup all purpose flour, 1/2 cup whole wheat flour, and I added 1 tsp of vanilla. I also mixed the cinnamon and sugar in with the recipe instead of sprinkling on top of the muffins. Ingredients

1 cup old fashioned oats
1 cup 2 % milk
1/2 cup applesauce (unsweetened)
2 egg whites
1/2 cup white flour
1/2 cup whole wheat flour
1/2 cup light brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. sugar
1 tsp. vanilla
Directions
This recipe makes 12 muffins.
Start my mixing the oats and milk together and allowing the oats to soak for one hour. After an hour, add the vanilla, egg whites, and applesauce to the oats...set aside.
In a large/medium mixing bowl mix together all dry ingredients. Mix well.
Add oat mixture to dry ingredients and stir until completely combined. Pour into greased or lined muffin tin.
Bake in a 400 degree oven for 20 minutes.
