Ingredients

    2 cup Brown Rice, long grain
    74 gram(s) bell pepper, red, sweet, raw
    1 serving 1 Med. Green Bell Pepper
    1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    5 oz Baby Carrots Grimmway Farms (3 oz = about 10/11 baby carrots)
    32 oz Chicken Stock Swanson 1 box (by MLBMACKIE)
    2 cup, sliced Zucchini
    1 cup Four Cheese Mexican Blend Fancy Shredded Cheese
    9 oz boneless chicken breast - raw (by KATHYMD0518)

Directions

cook the diced chicken until no longer pink.
Place stock, rice and vegetables in the pan.
cover and simmer on low until rice is tender.
Add cheese (optional) at the last few minutes.

Serving Size: makes between 5-6 1 cup servings
