Ingredients

2 cups egg substitute
8 oz fresh mushrooms, chopped
3 cups fresh spinach, coarsely chopped
2 plum tomatoes, sliced
2.5 oz fresh mozzarella, sliced
4 tbsp fresh basil , chopped
1/4 tsp black pepper
1/4 tsp garlic powder
Olive oil cooking spray
Directions
Preheat oven to 400 degrees.
Heat a large non-stick skillet over medium-high heat. Coat with cooking spray. Add the mushrooms and garlic powder, and saute until tender. Add the spinach and stir until wilted.
Lower the heat to medium and add the egg substitute. Season with pepper. Cook for two minutes, using a rubber spatula to loosen the edges. Place the tomato slices on top.
Transfer to the oven and bake for 7 minutes. Remove from the oven and top with cheese. Continue baking for 3-5 minutes, until the top has set and the cheese is bubbly.
Cut into wedges and serve.
