Introduction

I love the Cooking in a Mug recipes; this is one of my favorites. I love the Cooking in a Mug recipes; this is one of my favorites.
Number of Servings: 1

Ingredients

    1 1/2 oz Bread, or pancake, cut into 1-inch cubes
    1/4 cup Egg substitute
    1/3 cup Non-fat milk
    1/4 tsp Vanilla Extract
    3 dried Apricots, chopped (20 grams)
    1 packet sugar substitute
    Pinch of Cinnamon, or garish of choice

Tips

I use leftover wheat and nut pancake from iHop, or any bread I have on hand - measured carefully to keep calories in line.


Directions

1. Put bread (pancake) cubes into large mug
2. Whisk egg, milk, vanilla, & Sugar Substitute together, pour over bread cubes, stir gently
3. Microwave on high for 1 minute; check for doneness; if too liquid, stir and return to microwave for 30 second increments until center is still moist, but not liquid
4. Remove from microwave; enjoy!

Serving Size: Makes one 1-mug serving

    Excellent recipe as it's adaptable for individual needs. My daughter, who has no need to lose weight, makes it with 1 Tblsp sugar or honey instead of sweetener, 1 egg instead of white, and 2 slices bread. I've made it with chopped apple, and I always use cashew milk as it's low carb and creamy. - 7/26/18
