Introduction
Easy, microwaveable, and tasty low carb bread or bun. 0.15 cup of cheese is about 2-3 T, and any cheese may be used -- I've used Cheddar, Mozzarella, Jack, and Swiss. For a bun, I add half again of each ingredient and put half the batter into each of 2 containers. (That's 3 T flax, 3 T butter, 3-4 T cheese, 3/4 t baking powder, and 1 large or 2 small eggs.) Ingredients

2 tbsp Bob's Red Mill Flax Seed Meal (2 Tbsp)
2 tbsp Butter, salted
.15 cup, shredded Cheddar Cheese
.5 tsp Baking Powder
1 large Egg, fresh, whole, raw
Tips
I usually make the single piece for an open-faced sandwich with lettuce leaves on top. I make the bun and take it to restaurants who have good hamburgers, and they make my burger on this bun!
Directions
Use a microwaveable dish that is flat-bottomed and the size you want your bread to be, square or round. Melt the butter in that dish.
Mix the remaining ingredients together. Pour the batter into the dish, mixing some of the butter in.
Microwave 2 minutes to set.
Carefully remove from dish and toast in a toaster oven or broil to brown and crisp up a bit. The toasting adds flavor and makes it look prettier.

At 73 I am low carbing and concentrating on glycemic load. I tried this recipe; I am a cook for some 52 plus years. I said "how good can something that simple be". My hubby and I are on fixed income and paying almost $4.00 a loaf for Keto friendly bread. This is one of the best breads I have eaten. - 3/31/21
