Introduction

Ingredients

    4 Boneless, skinless chicken breast
    1 can diced tomatoes no salt (for spicier version I get the diced tomatoes with green chillies)
    1/4 cup seedless no salt sunflower seeds
    1/2 cup lemon juice
    1/2 cup No fat or low fat Cheese of choice
    1 Tsp lemon pepper

Directions

Pre-heat oven to 350 Place 4 chicken breast in large glass baking dish, stabb chicken breast a few times with fork, pour lemon juice equally on to chicken. Add lemon pepper to chicken cover with tin foil and bake for about 45 minutes. Take chicken out of the oven and spoon diced tomatoes over each piece of chicken, sprinkle with sunflower seeds & cheese place chicken back in the over on Broil for 5-10 minutes you dont want the topping too crisp! Enjoy makes 4 servings
