Ingredients

    1 cup Potatoes boiled in skins and cubed, or potatoes obrien
    2 tbs chopped onion
    2 tbs chopped bell pepper
    1/2 cup chopped tomatoes
    Mrs.Dash
    1 tbs EVOO



Tips

I boil potatoes and keep in fridge overnight to save time.
Sometimes I chop other veggies ahead too or use frozen chopped.


Directions

in heated non stick pan add oil to hot then add oninons and peppers till onions turn clear.
add potatoes and spice stir to heat
add tomatoes to heat through and serve.
