An easy weeknight dinner. An easy weeknight dinner.

Ingredients

    15oz can of black beans
    1/2 fresh tomato, diced
    1/4 fresh green pepper, diced
    1/4 fresh red pepper, diced
    1/4 onion diced
    Mission 8" flour tortillas
    low fat cheddar cheese, shredded.
    low fat sour cream
    yellow corn, fresh, canned or frozen.

Directions

Drain the black beans, mix the beans, tomatoes, peppers, and onions in a sauce pan. Heat to boiling & cook for 15 min, stirring frequently.
Turn on the broiler, lay out your tortilla(s) on a baking sheet. Sprinkle 1oz low fat cheddar cheese on each tortilla. Spoon 1/2 cup of the bean mixture onto each tortilla, fold the tortilla over. Place the baking sheet under the broiler. When the top of the tortilla is light golden brown, flip & brown the other side. Cut into triangles & serve w/1 tbsp low fat sour cream as garnish, and 1/2 cup yellow corn on the side.
