Introduction
These are our version of Biscotti, they are great for dipping in tea or coffee when you have to have a snack or breakfast on the run! Great for a snack with a cup of coffee on a cold blustery evening. Contains Fibre. Ingredients

1 1/2 cups Whole Wheat Flour
1 1/2 cups All purpose Flour
125 g Butter
1/4 tsp salt
3 tsp Baking powder
2 Tbsp Packed Brown sugar
1/3 cup Granulated Sugar
250 ml Buttermilk ( Fat free)
50 ml Pineapple or Orange juice
1/4 cup Quick Oates
1/4 cup raisins
2 Tbsp Bob's Red Mill Flax seed ground
1 Tbsp Cinnampon
11/2 Tbsp medium dessicated unsweetend Coconut
Directions
Preheat Oven 350 F
Spray 8 x 8 pan with spray
In a small bowl soak the raisins in the pineapple juice, set aside
In your Kitchenaid place flours, sugars, baking powder, salt, cinnamon, ground flax seed , coconut and oates, stir to mix. add cubed butter and mix with paddle till resembles breadcrumbs. ( if doing by hand rub in butter till resembles breadcrumbs)
Add raisins, juice and buttermilk, and stir to form a stiff dough ( do not overowrk or knead), just mix till moist .
break off pieces of dough and roll into a ball and place in pan, until you have 11 - 12 balls in pan in rows.The should be tightly pressed together with no spaces between.
bake for 1 hour, turn out on cool rack till completeley cool.
Break each ball apart with a fork , place all pieces in low oven to dry out over night ( 200 - 250 F ) when they are dried though and crispy , store in airtight container or plastic bags till needed.
if you want to you can sprinkle a cinnamon sugar mix over rusks just before baking for a sweeter treat!
If you make 12 balls , this will yeild 24 servings, if you make 11 balls , you will get 22 servings, So I have calculated it on 11 balls, to make 22 servings per recipe.
you can adjust as needed.
note:
A great addition to this recipe would be sunflower seeds , you would have to adjust nutritional info for that.
