Ingredients

    SEASHELL PASTA 32oz.
    CHICKEN BROTH 10.75 can
    WATER 3 Cups
    VELVEETA 1/2 THE FAT, CUBED 6 Cup
    BROCCOLI, COOKED AND CHOPPED 4 Cups
    1% MILK 2 Cups

Directions

COOK THE PASTA IN WATER AND CHICKEN BROTH. MEANWHILE COOK BROCCOLI AND CHOP. PLACE BROCCOLI IN UNDRAINED PASTA AND ADD MILK. LET HEAT UP TILL MILK BEGINS TO BOIL. TURN DOWN HEAT TO MED-LOW AND ADD THE CUBED VELVEETA. STIR CONSTANTLY UNTIL CHEESE IS COMPLETELY MELTED. SERVE WITH CRACKERS OR SALAD FOR A COMPLETE MEAL. MAKES APPROX.15-1CUP SERVINGS.

    When we made this, it wasn't really like soup at all, but very delicious. We used 4 cups of velveeta and not 6. It's so filling and rich, and with all of the pasta, it's hard to believe a 1 cup serving is less than 300 calories. Any thoughts for others? - 1/18/11
