Introduction

When you have cooked white fish and some brown rice you can make this for lunch! When you have cooked white fish and some brown rice you can make this for lunch!

Ingredients

    1.5 cup Brown Rice, medium grain
    74 gram(s) bell pepper, red, sweet, raw
    4 tbsp Extra Virgin Olive Oil
    4 oz FISH - Mahi Mahi
    .75 cup Peas, frozen
    3 tbsp (C) Vinegar, Red Wine (Gr Value)
    .25 cup, chopped Onions, raw

Directions

Mix all dry ingredients together. Make a vinegrette with the olive oil, red wine vinegar, salt, pepper with optional dry mustard and some chicken stock. Mix thoroughly. Let flavours mingle for an hour before serving.
