Ingredients

    1 lb of boiled orzo pasta
    1 red bell pepper chopped small
    1 yellow pepper chopped small
    1 bunch of scallions sliced small
    1 cucumber peeled and diced
    1 can of sliced olives drained (small 3.8 oz)
    1 carton of small Roma tomatoes, seeded and chopped (4)
    1 lemon, squeezed
    1-1/2 cup olive oil type dressing with oregano, greek or italian type, homemade or store bought works either way (I used Kraft Greek Vinaigrette non low-fat)
    2 tbsp parmesan cheese

Directions

In a large bowl, combine peppers, scallions, cucumber, olives, tomatoes, lemon juice, and 1 tbsp of parmesan cheese with 1 cup of dressing. Add orzo pasta.

Make night before, toss, add remaining ½ cup dressing before serving and top with remaining parmesan cheese.
