I'm following a lower carb diet and this is a lovely way to get in some tomatoes and shake up the morning eggs. I'm following a lower carb diet and this is a lovely way to get in some tomatoes and shake up the morning eggs.

Ingredients

    4.0 large Egg, fresh, whole, raw
    2.0 oz Athenos Feta Cheese
    14.5 oz italian style diced tomatoes
    Cumin to taste
    Cayenne pepper to taste
    Garlic powder to taste
    Salt to taste
    Pepper to taste
    Paprika to taste

Directions

Heat up entire can of tomatoes over a medium heat in a medium to smaller size skillet Add spices, honestly I like spice so I added a healthy sprinkling of each. Add feta cheese and mix into the tomatoes When it starts simmering, reduce heat and carefully crack each egg into the tomatoes. Try to keep them separate. Cover the skillet Cook for 3-5 minutes. Eggs should still be runny . I let mine go a little long so the yolk was only a little runny :( next time I won't try to clean dishes while cooking lol.

Serving Size: 2 eggs and half the tomatoes per serving
