Introduction

Ingredients

    3 cup Lentils (cooked, or 1 cup raw/rinsed/sorted)
    3 carrots, chopped
    1 medium (2-1/2" dia) Onions, raw, chopped
    10 clove Garlic, minced
    minced hot peppers to taste, optional
    2 tsp Salt
    1 Italian tomato, chopped

Tips

Also great in a slow-cooker. Use less water.


Directions

Toss it all in a soup pot with just enough water to cover, bring to boil, lower heat, simmer 20-30 minutes uncovered, and serve. I love it with croutons, but I didn't count that in the nutritional info here.
