Ingredients

    * Lentils, 1 cup
    * Garlic, 1-2 cloves, chopped
    * Celery, raw, 4 stalks, chopped
    * Onion, chopped
    * Olive Oil, 2 tsp
    * Carrots, raw, 1.5 cup, chopped
    * *Potato, raw, 1.5 cup diced
    * Water 6 cups
    * V8 Vegetable Juice, Low Sodium, 8 oz
    * Salt, 1 tsp
    *Ground Cumin, 1 tsp
    * Dried Thyme 1 tsp
    *Brown Rice, medium grain, 0.3 cup
    * Yellow Sweet Corn, Frozen, 1.5 cup kernels

Directions

Cover lentils with water.
Saute onions, celery, and onion in olive oil until tender. Add carrots and potatoes. Drain water from lentils and add to sauteed vegetables. Add water, juice, spices and rice. Bring to a boil. Reduce heat and simmer for about 30 minutes. Add corn and cook 20-30 minutes.
