Introduction

Lemon butter white wine sauce with spinach and tomato. Works well with mushrooms, sun dried tomatoes - really any veg. Ingredients

    12 fl oz White Wine
    1 tbsp Butter, unsalted
    2 medium whole (2-3/5" dia) Red Ripe Tomatoes
    2 cup Spinach, cooked
    1.5 lemon yields Lemon Juice

Directions

In a sautee pan (usually one I've cooked meat in), add white wine over medium high heat. Let cook for about a minute, then add butter, lemon, garlic, salt, pepper, parsley - any herbs/seasonings you like. Add chopped tomatoes. Add spinach to wilt. Season to taste.
