Number of Servings: 8

Ingredients

    Bulgur (2 cups pre-soaked)
    Onion (1 medium, diced)
    Garlic (3 cloves, diced/smashed)
    Mixed Veggies (15 oz)
    Eggs (2 medium, mixed)
    Olive Oil (2 tbsp)
    Sesame Oil (2 tsp)
    Soy Sauce (1 cup or to taste)
    Salt & Peper (to taste)

Directions

Pre-soak the bulgur per the package instructions (note, can be soak a broth for additional flavor)

Put large frying pan on burner to heat, add olive and sesame oil.

While pan and oil are heating, smash/dice the garlic cloves and onion. Add to pan. Let soften (approx 5 minutes).

Add mixed veggies to mix and soy sauce. May want to add soy sauce in increments checking flavor as you go. Also, held some back to add with the bulgur. Let heat through (approx 5 minutes).

Add pre-soaked bulger to pan. Stir well to incorporate all ingredients together. Let 'fry' for 5-10 minutes.

Crack eggs into a bowl and scramble.

In the pan, push bulgur mixture to the edges, leaving a 'hole' in the middle. Pour the scrambled eggs in the hole. Allow to set up, stir occassionally (within the hole) to scramble... Once the eggs are mostly cooked stir with entire mixture to incorporate thoroughly. Taste and add salt, pepper and/or more soy sauce as desired.

    Tastes much nicer than it sounds. Gave it a go with dry-frying (without any of the oil) and it was very nice. - 4/6/11
