Introduction

Good for Side Dish. Lemon Juice gives a little flavour to the couscous, which can be a little bland otherwise. Feta Cheese would be optional for a little more flavour. Good for Side Dish. Ingredients

    1 cup Whole Wheat Couscous
    1 tbsp Extra Virgin Olive Oil
    2 tbsp Garlic Powder
    1 Green Pepper, chopped
    10 baby Carrots, chopped
    1/2 tomato, chopped
    1/2 cup Fresh Spinach
    1/2 cup Lemon Juice
    2 tbsp Basil

Directions

Prepare couscous as per package instructions. Set aside.
Add olive oil and garlic powder to frying pan. Add carrots, green pepper to start cooking first. Add tomatoes after a couple of minutes. Stir and let simmer together.
Stir in prepared couscous and spinach.
Stir in lemon juice and basil.
Make sure mixture is heated through, then serve.

I divided it into 3 equal portions.
