Introduction

Our family makes our own whole wheat bread--right down to the grinding of our own flour. This recipe originally came with instructions to use 1 cup of wheat berries, but since they weren't in the catelogue you can convert that to the 2 cups of flour that it blends down into.

I'm not sure how well this works in a blender with straight flour, but I wanted to get the nutritional info for the recipe.

Number of Servings: 10

Ingredients

    1.5 cups of water, milk or butter milk (I use nonfat milk)
    1 c whole grain berries (2 cups whole wheat flour)

    1 egg
    2 tbsp oil
    1 tbsp honey
    1/4 tsp salt

    1 tbsp baking powder

Directions

Put water/milk and berries into blender--blend for 3 minutes.

Add egg, oil, honey, salt--blend for 1 more minute

At the very end, add 1 tbsp fresh baking powder. Pulse 3 times, just enough to mix. Mixture should foam up and get very light. Cook immediately on a hot skillet or in a waffle iron (using a bit less liquid).

10 servings (1/2 a waffle or 1 pancake)
