Ingredients
-
1 cup oats (rolled or old-fashioned)
1 cup pitted dates (deglet noor and medjool both work)
1/2 cup peanut butter (I prefer Smucker's Natural Creamy)
2 tbsp honey
1/4 cup raisins
2 tbsp dark chocolate chips
1 tbsp chia seeds
1/4 cup chopped almonds and cashews
Tips
You can sub the peanut butter for a different type of nut/seed butter if you prefer. The same applies to the raisins and chopped almonds/cashews: feel free to use any kind of dried fruit and nuts!
Directions
1. Process oats in a food processor or blender until they become oat flour.
2. Add dates and process again until a crumbly mixture forms.
3. Pour in peanut butter and honey and blend until a thick dough remains.
4. Transfer mixture to a bowl and fold in the remaining ingredients.
5. Roll dough into tbsp-sized balls and place them on a baking sheet or large plate.
6. Let chill in refrigerator for 30 min (or freezer for 10 min) before enjoying!
Serving Size: Makes 24 1-tbsp balls
