This is great for people with a vegan and gluten-free diet, and is a dieters dream being very low in calories and fat. Better than heavy, high-cal nutrient-deficient pasta. Just add your own home-made or bottled pasta sauce for a healthy meal. You can also use this in place of noodles. Ingredients

    1 or 2 Zucchini
    Salt, cracked pepper and dried Italian herbs to taste.

    Utensils: Mandolin (ideally), or a sharp knife and vegetable peeler.

Directions


Simply slice the zucchini length-ways on your mandolin using the wide setting to get long noodles.
OR
Using a knife, slice up zucchini into thin strips, or peel into strips/ribbons with the peeler.

Place strips into a microwavable bowl, sprinkle in 4 tablespoons of water, cover with cling wrap.
Microwave for about 2 minutes on high, take out and stir it up a bit. Re-cover and zap it for another minute. Season to your liking.
Top with your pasta sauce and you have a very low-cal 'pasta' dish!


Makes 1 large 'pasta' serve.
