Ingredients

    Dry Ingredients:
    0.67 cup Coconut Flour
    1.0 serving (scoop) Orgain Organic Protein - sweet vanilla bean (pea protein powder)
    1.5 tsp Baking Powder
    1.5 tsp Baking Soda
    20.0 serving stevia extract powder
    0.5 tsp Salt
    Optional Spicing:
    1.0 tbsp Cinnamon, ground
    1 tsp ground Ginger
    0.5 tsp ground Clove

    Blender Ingredients:
    3.0 tsp Vanilla Extract
    1.0 medium Apple, fresh with skin
    3.0 large Bananas, ripe
    1.0 large Carrot, raw
    2.0 large Zucchinis, fresh with skin
    6.0 large Egg, fresh, whole, raw
    0.67 cup Almond Butter
    6.0 tbsp Coconut Oil
    0.25 cup Coconut Milk (can)
    2.0 cup Mixed Baby Greens, fresh or frozen

    Mix-Ins:
    1.0 cup, unthawed Blueberries, frozen (unsweetened)
    2.0 cup, chopped Walnuts
    0.5 cup unsweetened flake coconut
    6.0 tbsp chia seeds

    Other variations: chocolate chips, dried cranberries

Directions

Mix dry ingredients together in bowl. Puree wet ingredients together in blender. Mix wet ingredients into dry ingredients and add mix-ins. Bake at 350 for 30 min. Serving Size: Makes 36 Muffins
