Ingredients

    0.75 cup roasted bell pepper & onion mix, frozen (Trader Joe's)
    0.6 cup green peas, frozen
    0.5 cup sliced mushrooms, fresh

    0.5 cup cooked hulled barley
    1 cup cooked chickpeas

    ~0.6 cup vegetable broth (may need a little more or less)
    1 tsp smoked sweet paprika [NOT OPTIONAL!]
    0.5 tsp ground cumin
    1 tsp garlic powder
    0.3 tbsp soy sauce (shoyu)
    1 tsp ground oregano

Directions

In a cast iron skillet, sauté the frozen veggies in a little broth until they're warmed through but not fully cooked (~ 5min).

Add the precooked barley and chickpeas, the broth, mushrooms, and all the remaining spices, stir well to combine, and allow to simmer on medium-high heat until the liquid is gone. Stir and taste test occasionally, and add more spices as you may need.
