Ingredients

1 lb. Shrimp, raw
6 - 8 oz Barilla Linguine or Fettucini
2 tbsp Extra Virgin Olive Oil
2 - 3 hot (red) Jalapeno Peppers, minced
3 cloves Garlic, minced
4 fl oz White Wine
2 cups chopped Red Ripe Tomatoes (Romas work, too)
1/2 cup Parmesan Cheese, grated
1/2 teas. salt (optional)
1/4 teas. pepper(optional)
Tips
Has a little heat, but not overwhelming, with 3 chili jalapenos, the red skinny ones. Adjust accordingly.
Directions
Peel and de-vein shrimp. Cook linguine (or other pasta) according to package directions.
In a large skillet, heat oil over medium-high heat. Add jalapeņos, garlic, salt, and pepper; cook and stir one minute. Add tomatoes and heat thoroughly.
Add shrimp and white wine (or Marsala wine if white is not available); cook until shrimp just turns pink.
Drain linguine; toss with shrimp mixture. Top with Parmesan cheese.
Variation: Add 3 Tb chopped fresh basil instead of the chili peppers. (I have not given this variation a try, so let me know if you try it and like it!)
