Ingredients

    1.5 C all bran origional
    2 Tbsp white vinager
    1 C skim milk

    1 C whole wheat flour
    .25 C splenda
    1 tsp baking soda
    1 tsp baking powder
    .5 tsp cinnamon

    3 egg whites
    1 med mashed banana
    .5 C unsweetened apple sauce
    .5 C dried cranberries

Directions

Mix all bran with vinager and milk in a large bowl. Let soak while mixing other ingredients.

In a seperate bowl stir the five dry ingredients together.

In another bowl mix egg whites, mashed banana, applesauce and cranberries.

Stir the liquid mixture into the all bran mixture. Stir the dry ingredients into this mixture. Stir until all ingredients are well mixed. Pour into greased muffin tins and bake for 20 mins at 375.

    Great! These don't even taste low fat. I substituted the applesauce for another banana and cut out the Splenda and I also used raisin instead of cranberries.
    I make them all the time now.

    Very Good
    So easy and a great snack! I made some changes based on what I had: I used 2 bananas and reduced the applesauce to 1/4 cup. I also used bran flakes and raisins, instead of All Bran and Cranberries. I actually yielded 15 muffins, and the WW points are still 1/muffin even with changes. - 11/3/10
