Introduction

Ingredients

    3/4 c Flour
    1/2 tsp Salt
    1 Tbsp Baking Powder
    1 c mashed bananas (2-3 large)
    3/4 c sugar
    1/2 c butter (1 stick)
    2 large eggs

Directions

Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray.

In a bowl combine flour, salt and baking powder until well mixed.

In a second bowl mix sugar, eggs and butter until light and fluffy. Add mashed bananas and mix until well incorporated.

Place dry ingredients in sugar mixture and stir until smooth.

Pour batter into greased loaf pan and bake at 350 degrees on the middle rack for 50-60 minutes. Top of bread should spring back to the touch and a cake tester inserted should come out clean when it's done.

Allow bread to sit in the pan out of the oven for 10 minutes then remove from the pan for cooling.

Make sure to wrap any unused bread in plastic wrap to keep it moist.

    Has anyone tried this using Splenda? I am new to cooking healthy so I am not sure what works and what doesn't yet. Could you use egg whites in place of the eggs? Even if not then I think I will try this one. Sounds yummy. - 1/20/11
