Ingredients

300 ml Fruit Juice
200 gram(s) Sultanas
100 grams dried Apricots (or dates)
2 large eggs
225 gram(s) Self Raising Wholemeal Flour
1 tsp Baking Powder
1 tsp mixed spice
Tips
You must line the tin well as there is no fat in the recipe to prevent the loaf sticking,
You can add 100g chopped walnuts or pecans to the mixture but this will increase the calories to just over 200 per slice.
Directions
1. Soak the fruit in the fruit juice for 2-3 hours
2. Preheat the oven to 180 and line a 1lb loaf tin
3. Mix the eggs into the fruit mixture.
4. Add the flour, baking powder and mixed spice together and stir into the fruit mixture.
5. Spoon into the tin and bake for 45-50 minutes.
6. Allow to cool in tin for 10 mins before turning out.
Serving Size: makes 12 slices
