Introduction

Ingredients

    1 eggplant (large)
    1 Lemon, juiced
    2 tbsp Tahini
    1/2 tsp Salt
    5 cloves Garlic

Tips

I needed to squeeze the juice of the whole lemon and use 5 whole cloves of garlic. But you might want to taste it before adding it all. The original recipe called for only one large clove, and I used 5 or 6 small cloves.


Directions

Rub eggplant with olive oil and roast at 450 degrees for 15-20 minutes, turning a few times, until the eggplant is soft and the skin is charred. Allow to cool and remove the skin.

Process the eggplant, lemon juice, tahini, salt and garlic in a food processor until creamy.

Serving Size: Makes 4 - 1/4 cup servings
