Number of Servings: 8

Ingredients

    1 large (3-1/4" dia) (approx 2 per lb) Apples, fresh with skin
    3 beet (2" dia) Beets, fresh
    1 tbsp Honey
    4 tbsp Extra Virgin Olive Oil
    0.75 tsp Cumin (ground)
    4 tbsp Bragg Apple Cider Vinegar
    1 large (7-1/4" to 8-1/2" long) Carrots, raw

Directions

In bowl mix together dressing ingredients (vinegar, oil, honey & cumin)
Using mandolin slice carrot and apple into bowl
Using mandolin slice beets and then run under cold water to bleed off some of the colour then place in bowl with carrots and apple.
Add the dressing and stir. place in fridge and stir occasionally to coat all of the salad.
Serve on its own or over greens.

Serving Size: 1/2 cup per serving - makes 8 servings
